Feel the aromatic flavors of the cuisine from Alentejo. One of its most distinctive traits is the sophisticated use of herbs as essential ingredients in food preparation. This can be explained by a cuisine, once poor, that had to find humble local herbs and the wise formula to enrich itself. When there was nothing else but stale bread, the people from Alentejo tried to soften it in hot water and season it with whatever flavors they had: garlic, coriander and olive oil. The result was "Açorda alentejana" and "Migas alentejanas" that are typical on the tables in restaurants across Alentejo and proudly integrate the best national gastronomy.

Introduced by Arab influence, the herbs invaded Alentejo's cuisine with thyme and rosemary inebriating the lamb, basil cutting the sweetness of tomato, tarragon complementing the chicken and oregano transforming cheese into ambrosia.

You only have to let your imagination and your palate fly and surrender to the scent and taste of over twenty different herbs that you can buy in fairs and markets across Alentejo.
